THE GRAIN LAME
For a long time I've wanted to make an breadscoring knife that's a little more manageable, one that fits ergonomically in the hand and is safe to use. I have now succeeded in doing this with the Grain Lame.
Both wheat and rye breads and small baked goods benefit in volume and taste from the incision and only become a special eye-catcher through successful scoring.
By cutting the dough, the formation of the crust can be controlled and thus ensures a more intense aroma due to the higher portion of crust.
Correct cutting is essential, especially with French baguettes.
Each of these small pieces of artwork is unique and has a different look thanks to the naturally grown wood grain.
Each blade holder is made by me personally in my small workshop - from the rough wood from the sawmill to the perfectly processed surface, many work steps are necessary - that takes time, but is reflected in the beautiful look, pleasant feel and suppleness.
The "Grain Lame" from "Schnitt-Holz" is pleasing to both the eye and the hand. It is particularly practical and safe that the blade can be retracted completely into the wood when the knife is not needed.
